Creamy Tomato Soup + Grilled Cheese

Creamy Tomato Soup

Difficulty: SUPER easy

  • 1 Stick Melted Butter
  • 1 Medium Sized Onion (diced)
  • 1 Bottle Organic Tomato Juice 
  • 1 28oz Can of Tomatoes (chunky)
  • 1 28oz Can of Fire Roasted Tomatoes (chunky)
  • 3 Chicken Bouillon Cubes
  • 1 Pinch Salt 
  • 3 Tbsp. Sugar
  •  5 Tbsp. Fresh Cracked Black Pepper
  • 1 Tbsp Red Pepper Flakes
  • 1-1/2 Cup Cooking Sherry Wine
  • 2 Cups Heavy Whipping Cream
  • Roughly Chopped Fresh Parsley
  • Roughly Chopped Fresh Basil

In a large pot, sauté onions in butter until slightly browned and translucent. Add both cans of tomatoes, tomato juice, chicken bouillon cubes, sugar, salt, and black pepper. Bring to boil. Lower heat and add sherry, stir. Add heavy whipping cream and herbs (parsley and basil), stir. Turn off heat and serve! Top with more basil and parmesan cheese! Yum! 

Grilled Cheese:
  • 2 Slices Rye Bread
  • 2 Slices Provolone Cheese
  • 2 Slices Sharp Cheddar Cheese
  • 2 Tbsp. Dijon Mustard
  • Caramelized Onions
  • Softened Butter
